You can resume the race only by pressing "resume" with "Enter" button.
I don't remember what the "default" button for "pause" is, but you need to go to options, and switch all the buttons to the ones you feel more comfortable for you: right, left, accelerate, reverse, "use your weapon" button, "flip your car" button, "full resurrection" button, "pause" button, horn...
That's what I did as soon as I started the game.
My conrols now are D,A,W,S, Space, E, R, C, LShift, ...
So to finish the race without waiting every opponent finishes the race too, I just press "C" now.
However in "Single race" mode I noticed that no matter you press "Esc" button or "pause" button, you'll see the same menu {"Restart race", "Quit race", etc}. And {though it doesn't look like "continue", and look more like a bug indeed} you can just press "Quit race" button. The win in this race will be still counted to your progress {you can check it by the phase "Won race: Yes" instead of "Won race: No" on the "Summary" screen before the final confirmation of the chosen race to start}. And if you want to play this track again, then you can just choose "Restart race" option.
