So the only solution I can think about is to choose a lower resolution. That way the text is bigger in relation to the ingame graphics. Of course the graphics are more pixelated that way. But the game was originally released nearly 10 years ago. So if you're now using a resolution 1920x1080 or even higher then you won't loose graphics quality when you choose a lower resolution since the background graphics has a resolution of less than 1920x1080.

It won't solve the cursor problems (at least for me didn't worked) and some texts are still small but the rest is fine. In my case I had to use it because when I try an smaller resolution for this game the sound stops playing for no reason...
If anyone is still interested in changing the font sizes then go to the Black Mirror folder location created by Steam for the game. Then open the file 'game_resources.xml' using notepad. There are a list of fonts described for various things.
I changed the speech font from size=18 to size=30 and played the game. The subtitles were much bigger when talking to someone.
I also changed the label font from size=16 to size=30 and played the game again and now when the pointer is on a person or an object the font is much bigger and also when you click on an object for a description the font is also at the much bigger size.
I haven't tried changing other fonts to see what the effect but as I play the game I might update this post if I decide I need to change other fonts too.
<FreetypeFont label="messagebox" file="OldTypefaces" size="30" />
