Trying to make a Card castle, but
I only know how to angle the cards to the side. How do I angle the top so I can start stacking them properly?

Hold ALT + MMB or ALT +Q/E, whichever is your preferred method. Be sure to press the ? key for the control scheme menu.

That only makes it stand on it's side. I want to be able to stand it up on the ends.

Actually, how would I get two cards, at the same time, to be slanted against each other?

Press L to lock them in place so you can stack another on it.
