The devs have stated that the tablet feature should be considered alpha right now, so I would assume more funtionality is coming. :) As for modding the functionality of a tablet, modders don't have access to that currently.
Also, you can actually size up the tablet beyond the -/+ limits in-game:
1) Make a save game that includes a tablet.
2) Open the .json file of that save game in a text editor. The filepath can be seen when making the save.
3) Find the tablet object entry in the .json file.
4) Modify the x, y, z scale properties of the tablet object.
5) Save the .json file.
6) Load the save game in Tabletop Sim and the tablet should be sized up to match your settings. Once you get it to the size you want, you should be able to save it to your chest for later use. From what I've seen, this doesn't negatively effect funtionality.
While not exactly a TV, this will probably serve. (Remember you can lock the tablet in place with the 'L' key and rotate it up and down by holding ALT+Q/E or ALT+Mousewheel) Have fun!
