Honestly though, as with players at an actual table, if not everyone is actually interested in playing along, you're probably doomed from the start. If you have to go to these measures to keep them from messing with you, they're probably just going to find some other way to do it.
I'd suggest just talking to them about it, but of course, it's your group. Good luck either way.
You could use shrink boards to setup what you want to eventually reveal, and then out a hidden zone over your shrink boards. Or many other options.
I know this is a few years late but I found this post when looking for a solution, found that you can activate fog of war and then use the character pieces to slowly remove it as they go though the dungeon or area that you are in, only the DM can see the entire map without fog of war and it means that you can keep guard patrols going etc without the players knowing or you having to do it in your head for you then having to spawn it in for the players.
I know this is a quite old, but people have been asking how to do this forever, and it seems like there's never been a good way... until now. I spent some time writing a script to help with hiding objects from only certain players.
