The easiest way for more late game would simply be changing map setting to plentiful Gristmills on a large map. That does not really prevent fallowing, but gives you enough food to have a pretty long late game with huge armies.
You can also make farms last much longer on custom maps - here's an example on the Workshop:

The easiest way to do that is loading the (finished) map in a text editor, and replace all
Then reload the map and publish it.
If you're playing offline, you can enable cheats (in the Options), and use '=' to stop starvation and just keep playing.
If you only play offline or unranked with friends, you can also modify the game files to increase the default value of farm minerals (in ToothAndTail/content/data/multiplayer/minerals/farmland.xml > StartingMinerals).
All players need to play with the same modification, else the game will desync! (After next patch, however, you should be able to upload such changes as Workshop mod, and activate it for online play in unranked lobbies.)
