the Type-I is sort of the all-rounder. it has the weakest shot type, fastest lock-on, and average movement speed. easy to use, nothing special.
I don't have much experience with the Type-II, but from what i can tell it seems to be pretty well-rounded in terms of damage and speed. the playstyle mostly revolves around the variable-width shot, and i imagine the effectiveness of this ship depends on how well you can make use of that feature.
there are some other differences with regard to scoring. the Type-Z gets a penalty to break rate, meaning the number of times you can double-break in a stage is reduced comapred to other ships. i believe the Type-III suffers from this to some degree as well.

Speed - Slow
Firepower - Low
Spread - High
Lock-on - Fast
(Low speed and firepower, but wide spread and fast lock-on- likely best for dealing with large groups of weaker enemies)

Speed - Medium
Firepower - Medium
Spread - Medium
Lock-on - Medium
(Well-rounded, jack-of-all trades; gun drones can also be positioned in different places by holding the lock-on)

Type III:
Speed - Very fast
Firepower - High
Spread - Low
Lock-on - Slow
(High speed and firepower, but low spread and slow lock-on- likely best for taking down individually powerful enemies quickly)

Type Z
Speed - Fast
Firepower - Very High
Spread - Very High
Lock-on - Fast
(Strongest all-around fighter, only disadvantage is a slightly slower speed than Type III)
