With the boat ride it is best to actually build tracks for them to row on: otherwise the park patron will choose to stay out on the lake forever. If they are forced to stay on tracks they end up back at the station.
I actually recommend building tracks to and from the station which forces the boats to return as the patron moves the boat.
If it occurs that one of your boats won't return you need to redesign and rebuild the slide to get this "dead end" out of it.
