Falcon 4.0 would be the best jet combat sim to try IMO. Best dynamic campaign of any sim, and it's being constantly modded to very high standards by BMS. They have just upgraded the graphics so it's practically a new game. The original is on Steam which you will need to install and run once, but then you need to patch it with the BMS patch.
Also worth saying that Tornado is also now on Steam - still very enjoyable even with its old pixellated graphics. Some great dynamic campaigns and superb training missions, a great way to learn about combat jets and air combat strategies. Brutal unforgiving game though lol.
I wouldn't bother with this game btw, the previous EF2000 was the best sim that DiD made by far, although the previous TFX was also pretty damn good. I played TFX and then EF2000 for ages still consider the latter to be one of the best flight sims ever made. They should add them both to Steam with Dosbox I would love to try them both again, both well ahead of their time. TFX in particular had breathtaking graphics when it came out in the early 90s it featuring a Eurofighter, F22 and a F19 Stealth Fighter. But the Eurofighter in EF2000 is such a cool plane to fly and the campaign was so great set as it was in a very moody dark Norway. Most immersive sim ever.
