Not to be argumentative, but you don't seem to understand CH Products very well. They are the opposite end of basic. I've owed CH for many years (from before USB), and have owned Saitek as well. I always keep up on the latest iterations of Thrustmaster, Saitek, Logitech, and have to say I stick with CH because I just can't imagine achieving the precision and level of sophistication with anything else that I do with my CH HOTAS. Maybe Thrustmaster, but I also own some Thrustmater gear and have used their software too. It's the software that really works the magic, but the hardware is rock solid, too, with nothing goofy about the ergonimics...very basic/generic (though F-16 inspired) and work great for all sims that I use them for. I run many profiles with 8-10 analog axes (stick X/Y, throttle, pedals, toe brakes, two rotaries, mini stick X/Y) multiple modes for each button used with scripted virtual "shift" keys plus the actual "shift" button, plus the CH Multi Function Panel. Throw in the standard Throttle Quad which I use as levers to activate lever stuff (not for analog axes) and all of it's extra buttons, plus I have the Franken Potato mod on my Pro Throttle. I use these in combination with the Thrustmaster MFDs for study sims like Falcon 4, DCS, etc. CH is far from basic in every way except their ergonomics, where being basic is a virtue.
Just something to consider, out of fairness for what CH gear is really like.
EDIT: and to be clear, there are no lack of buttons...I couldn't begin to count all the buttons on the stick, throttle, Franken Potato, Throttle Quad, MFP...multiplied by 4 modes, and each with an option for shift... effectively endless. And physically, we're talking dozens upon dozens.
Since it has Franken potato then count me in. I will research it all.

That said, I can't get pass the tutorial. It says "Press UNBOUND to Boost". I checked the keys and I can't find a button to boost and no input on my throttle gets me past this screen. The tutorial screen is showing me a Xbox pad, but no idea where this mysterious "boost" button is supposed to be.

I think it trips once you go past 290 for a second.
I'm gonna change the name again to have both words (Boost) Digital Throttle Up or something.

I finally got through the tutorial and now I'm stuck on mission selection screen. I imagine if I had a cursor, I would have to click on the first mission, but since I'm on joystick controls the cursor is invisible and I can't seem to figure out the keyboard navigation (Enter sends me to the pause menu).
Now my main problem seems to be the Throttle, which only works on the last 10% of the top end, so I'm either on full boost or enigne idle.

I have similiar throttle action to what you describe, but I would say I only see forward throttle at 98-100% full forward. However, if I slowly pull throttle all the way back to 0%, it scales down properly. Would you say you're seeing the same thing there? Also, I believe Mr. Mike Tipul is working on a correction for that.
I experience EXACTLY this with my X52 Pro. I tried messing around with the game's built-in calibration tool, trying different Zero positions and Sensitivity but didn't really help.
I've been playing with the digital throttle controls on my pedals' toe brakes, and that works fine.
