I took out a Euruska T-90 tank with the Anti-Tank Rifle for +/-5 shots

Grenade launchers, most efficient way. Rest of things will consume a lot of med kits and bullets not worth it.

Yeah you can. Late game with turrets, grenade launchers and IEDs. Only a few things are unkillable like the Dommy Mommies, Grabbers/"dogs" and probably those building sized heavy mechs.

Are the Heavy Mechs in the game yet? I haven't seen any but the destroyed ones. Also, are we officially calling the harvesters Dommy Mommies now? I approve.

I did once get offered a mission to kill a Medium Mech iirc, but the juice didn't seem worth the squeeze. I know it's possible, but watching a pair from each side wailing on each other for 5+ minutes with neither going down makes me think it's never going to be worth the effort.

So there's multiple mechs.
There's the "little" mechs, Exosuits. Can easily be killed by 4 Grenades.
There's the Medium Mechs, which take like 30 grenade shots.
Then there's the Large Mechs, which I'm pretty sure can't be killed via the Player, take a long time to die to AI. (Toothies and the Euruskan Version with the Cages)
Dommy Mommies and Giant Robo Doggos (Grabbers) can't be killed either, but you can force them to retreat with enough shots or a few grenades.

Merc and T-90 Tanks are about as tough as an Exosuit and only take 4 Grenades.

Brawlers and Orga Mechs are pretty tough to normal gunfire, but Brawlers die in 1 Grenade, Orga Mechs take a lot of grenades. (They only attack via melee)

Haven't tested Corpse Tanks yet, but people say you can't kill em.

if you dont want to look out for rare weapon options go for granade launcher you can buy from vendor + buy some turrets to sup you and pick correct map, if you go to enclave and drop a turret + launcher most of the mobs will come to you and beef with you.

best option can be anti tank rifle with turret to kill them a far before they can come to you + u can lure them cuz u are a far no need to be close and draw attention but for that you have to finish some quests.
