Cadet mode is pretty easy, and if you just want to learn, just turn off all Ais.
For the most part it is normal for Paradox games to learn something new with every session you start for your first couple of hundred hours but that shouldn't discourage you.
I'd suggest watching a tutorial playthrough like the how to play Stellaris 3.2 one from Aspec and simply play along with it for your fist 2-3 sessions and that should get you started.
All the other details are not that important and you'll learn them gradually over time by just playing.
There are no tutorial scenarios or massive texts, you just learn by playing and receiving tips.
Also, there's plenty of YT content out there explaining several mechanics if you want to dive deeper on how things work, just be warned that this game mutates more than the HIV virus so any content or tip you see from over 1 year ago, at any point in the future, will probably no longer be relevant.
