i played stellaris alot more than CK3. it's a decent game. can't tell you if you'll like it or not. guess you could watch some let's plays to see if the gameplay is appealing to you

On CK you can start being King of England and end up a count in China Stellaris is doesn't have that sure there are rebelions and etc....BUT in the end your empire is you
More than that both are Paradox games and most of it is the same(except races they play completely different from each other)
They both fit different niches and do different things with a completely different focus. Like HOI4 is vastly different from either CK3 or Stellaris.
However if you like CK3, chances are you'll find Stellaris to be a fresh but similar experience that you'll enjoy.
I find with Stellaris I start to get bored around the end game crisis time as by then you've got a war in heaven going on and ai empires dropping like flies and then the end game crisis kicks in. That's fun the first few times but it gets old after hundreds of hours.
