Spectator mode?

I was just wandering if there is a way to ;start a game in spectator mode and let the AI run the game. I have some Ideas for a Table top RPG and need a galactic map. I thought Stellaris would make a great one, and I just wanted to see if there is a way to allow the AI to play to a certain point.
