Report a translation problem
I put off buying the game for a LONG time because I was intimidated by it, and I thought it was going to be overly-complicated. It's not. And the UI is just fine for what the game requires.
If you need some help, I have some very informative tutorials for you. This should have you up-and-running quickly.

The UI isn't really some monstrosity different than every other strategy game.
Did you try the tutorial messages at all?
Never seen a tutorial. Have they finally added one, I tried starting games up with a custom race and nothing everytime. And I considered refunding it on day 1, but the possibility that I could play like the zerg from starcraft stayed my hand. Unfortantly after 5 trys theres no tutorial and the ui is confusing

Not to be rude or anything, but if taking some time to understand the basics of the UI already exhausts your attention span, then you're probably not the kind of person who'd enjoy Stellaris.
You seem to be looking for lots of instant-action... but that's not at all what's on offer here. The entire game is slow, methodical and complex.
Let them start with the United Nations of Earth, or however it's named.
With UI Overhaul its even better, and feels more natural with my 1440p display.
Also gonna try a criminal syndicate for the first time soon, should be ibteresting

Like the red text saying "Disables Tutorial" that appears when you hover the Gestalt civics ?
Perhaps they should devise another tag for "Action RTS" games, which Stellaris is not.
@Supcrème Grommander: yes, like this one, but not embedded in the middle of an empire creation module. Newcomers get bold these days, and warning that a tutorial is disabled is not like advertising that a campaign is for experienced players only.
to be fair, games like dune 2, command and conquer and warcraft were what actually MADE the RTS-genre, it was just that back then nobody ever envisioned that games with the scope of most of the pdx-games would ever be made as anything other then turn-based games.
