Today's update doesn't brick saves.
disable as many mods as you can, anything that isn't required for your in-progress game.
that won't save you if your old mods are updated. (bit fast for that to have already happened for big mods though.)
1) noone is forcing you to update the game
2) you can just pick the version/patch you want from steam properties
so what exactly is your problem here huh?
some mods are not required anymore after the game has started. e.g. different galaxy sizes and stuff like that.
just disable everything you think isn't required and maybe your game will work again.
(but even then, unless you take more advanced measure you are still on borrowed time until those mods update too.)
I’m going to spell it very slowly alright.
The game works.
The update did not break your save.
The mods you are using broke your save.
That happened because those mods (one or more of them) are now in conflict with something that was changed in the update.
You can either wait until the mods are updated themselves (with no guarantee the save will work) or start a new game. Technically, if you saved the mod content in a backup folder on your pc instead of just subscribing to them on steam you could play by simply reverting to a previous version.
kinda the opposite. surprised mods are updated so fast that it bricks an rolled back game just a few hours after the patch.

I went back to a earlier version but that didn't work.
Steam forces updates, you can't play any game unless it's sync'd up. You have to update it and then roll back. How do you not know this?
If I could disable updates to all games I would. But there is no option for that.
