It would be wise to give an accurate description of which mods you play with to get opinions worth something.
Assuming Gigastructure is the only gameplay changing mod you have, Attack Moon, Behemoth Planetcrat and Stellar Systemcraft are all extremely (increasingly) powerful ships.
Assuming eco-wise you've got what it takes, you should definitely make them.
The X-slot missile batteries can fire from halfway across a Real Space resized solar system, meaning they often win without the enemy firing a shot.
In my experience, the only disadvantage is the slowness, but equally I run a tweaked version of Real Space and it's speed altering submods, and there's probably some weirdness there that makes them take so long to get anywhere.

Attack Moons are so grossly overpowered that they'll only have trouble if you hop a single one in a group of dozens of fleets. They only take 50 Command Points, so it's not like you can't stack multiple together or treat them like a Titan in your fleets. Even then, conventional ships will just get absolutely destroyed by them considering how much firepower a single Attack Moon can pack, combined with it's ridiculous health pool.
It also doesn't help that other AI empires also lag extremely far behind you with Gigastructures because they really don't understand how to build them beyond the basic Kilo Structures until very late game. By the time you even see them starting to get Attack Moons, you can easily have a Multiple Planetcrafts, if not working on the Stellarcraft.
The only time I've ever seen Planetcrafts is with one of the Crisis that comes with Gigastructures or one of the options to give Fallen Empires additional Moons/Planets on spawn and/or on Awakening.
Frankly, nothing about Gigastructures is balanced with AI in mind, because they can't even handle Kaiser's Moon on GA.
