But last I checked with any PDX Grand-Strategy, there is no way to disable Ironman once it has started.
Maybe theres a third party website or program that knows how? tried editing the files but it don't work.
Being able to just toggle it off and on even with file editing would compromise their whole view on Ironman mode. Not one I agree with but it's just how it is.

i did it after a bit of work, here's how you do it;
1. Go to Documents -> Paradox -> Stellaris ->save games -> save game you want to change
2. Change the ironman.sav file into a .zip file by renaming the file, might have to enable file extensions at the top of the window by clicking View.
3. Once you have the .zip file, open it and there will be a Metadata and Gamestate file.
4. Change both files to a .txt file and open them, do CTRL+F "ironman" change yes->no, save file
5. Do this in both files, then remove the .txt so they revert to their original states.
Compress both gamestate and metadata files back into a new .zip file, you can rename the file so it's not the same as the original.
6. Revert/rename the new .zip folder back into a .sav file.
7. Launch the game, and the save file should be available to play.
that doesn't work for me, it just creates a new ironman.sav file every time I start the game
Tested on 3.14. it worked for me.
The trick is to create a new non-ironman save (the empire you choose doesn't matter), then replace it with the edited save from the iron man game
With 7zip all you have to do is drag and drop the edited files into the .sav
