Should I turn down renowned leader/paragon I don't really like?
Just wondering if there's a cap on the number of renowned leader/paragon or some sort of background system that make it less likely you'll get one if you already have one.

A couple of them are okay but I don't particularly care for them and would rather get another.

Never turn down the one that can terraform any Barren world into Gaia worlds with her ship. A plantoid one (Forget the name). (Though its limited to 3 uses then she dies)

No, there's no benefit to denying any of the paragons, other than not spending a point of leader cap in the case of renowned paragons.

The only way to increase your chance of getting a specific renowned leader is to limit the number of ethics your empire has, so your pool of potential leaders is the minimum of 4 instead of the maximum of 6.

Legendary leaders all have unique spawn conditions, so you can "hunt" for some of them, while others are pure RNG.

Yes, there is nothing unique in Renown Paragons (one that tied to ethics) aside from two tiny events related to each (not really worth it). Very few exception (I would say only a Kidnapper general - it's too annoying to develop your own general from level 0).

No, in case of legendary paragons - they're too rare and could have unique abilities.
