People have starting system preferences primarily for roleplay purposes.
I like the cool blue background of the Ocean Paradise start. It definitely sets a mood. It does also always start in a nebula. so you have some privacy while you're putting on space uniforms.
Simply because you already know the guaranteed habitable planets - Sirius and Alpha Centauri - and you know they are in a binary and a trinary system. This really speeds up the immediate exploration and colonization after game start.
You also get two guaranteed terraforming candidates, unless you play Void Dwellers (Sol). Means at least two more habitable planets within your capital sector.
Also i'm a human IRL, so playing humans in the game seems pretty natural.
