Carrier makes your titan stay safely behind your fleet, artillery is good for getting your titan into the fray and dying because the biggest enemy ships will automatically focus fire on it when it's in range, assuming the enemy is strong enough to actually challenge you.

Well, you also could make your battleships into Line so they get the CTH bonus, then the Titan is still in the back row. The problem with the Titan taking all the damage is certainly obvious.

There also is the engagement range bonus from the Carrier computer, where i am not aware of the details. Basically the Perdition beam has a much longer range than the artillery guns, same with the actual Strike Craft - the fleet does not engage when at max range unless the Carrier computer is installed.

Carrier is told to stay. The artillery is not.

Always nice to have a few Carrier escorts for a fleet/Titan as well, counters ancient empire fighters to a degree. A few Carrier tactics ship are great for initiating combat to engage fleeing ships before they duck through a hyperlane too.
