I did Vulcans as well but the AI turns them into weirdo ideologists hell bent on attacking peaceful empires with different ethics. I have to tweak that one.

Void Dwelling, Fanatical Authoritarian, Xenophobic, Aristocratic Elite, Humans (Called the Noble Houses of Arcturus). :P
They were outright evil*, having their privileged noble cast, enslaved aliens and even had a few habitats for breeding xeno livestock (solving the food issue).
They used slaves for most things (Domestic Servitude, Chattel Slavery, Battle Thralls, you name it).
They dumped droids down on planets (so i didn't have to worry about rebellions and unhappiness on those) to extract resources while slaves worked the astro-mines in habitats (a few of my main species could be present to keep the slaves in line).
Later in the game they also cracked most of the planets in the galaxy. Since they were void dwellers and had the attitude that planet dwellers were weak inferior beings and that planets were to blame since they spoiled their inhabitants.
Was a fun game.
*Note that while i enjoy playing evil in games, i do not in anyway support such practices in reality.
