Stellaris by contrast, is much more open - there are premade races to play as, but the Devs have stated that they are for inspiring player's ideas more than defining a "canon" Stellaris scenario.
Personally, EU IV and Stellaris I like. Ideally, what would be brilliant is EU IV type planetary management in Stellaris, although the chances of that are nonexistent.
Imperator:Buggy mess that can be fun where you manage pops and build different structures to tweak your economy, while through the ages developing legionary systems and other parts of your nation.
CK2/3: A glorious game where you either roleplay as a country in history, or proceed to do something goofy and paint the map the color you want. Plenty of variety to be had with custom religions, family/court management and plenty of story telling to be had for your playthroughs and rulers,
EU4: A Game where you pick a nation somewhere on the globe in the 1400's, and try to outsmart and outmove the AI while managing alliances, Techs, and various nation matters. While dealing with various historic events and the advancement of society.
Hoi4: A ww2 sim where you try to out pace your AI/player opponents and counter their unit comps, which is usually in the form of Infantry with arty, and ♥♥♥♥♥♥♥♥♥ of planes. While taking various paths for different nations like stopping ww2 altogether to being able to form a nationalist mexico that invades the united states.
Stellaris: A space strategy game where you try to expand faster than your neighbours, and either painting the galaxy your color and purging all other intelligent life, or roleplaying as a peaceful mushroom that just wants to be friends with everyone.
Very simplified, but maybe it well help you pick one to look into.
Probably the other games are better at the multiplayer aspect.
