You claim their capital if want to make sure they don't give up, then claim all the tiles near you, you want. This allows you to weaken, chunk territory at the end of stalemate and gain pops putting you well off. Doing this back to back 10 year sessions can quickly result in the demise of a neighbor. Though beware of taking too many pops in a war. Their neighbours might consider giving them defensive packs to stop your advance next war.
Normally though they are either finished in the first war or the second. And the pop gain gives you enough strength to hit the next strongest neighbour.
Take a look at this page, I could explain but would take 30 min in what you will figure out looking at pictures. You can trace these setting to your in game to see whats going on. Oh believe me I could fill this whole page in ways describing how to use certain combos.
You will need to go into the second bottom tab on left side, the one that looks like a dna. In there you have settings for what species will get by default, and set the rights and standards of whatever species you want to slave. There should be a lock symbol so you can stop the menu form annoyingly opening or closing. Its for whatever style you like.
