More information is needed for any kind of useful feedback. What kind of Empire did you play as? What kind of situation did you find yourself in? What did you do that provoked them to declare war on you and what did you do to prevent it?
one federation declares war on me, then another, all the while i had good relations with them zzzz, I am facing the whole damm universe on a defensive war. I could deal with one of them, stretching my luck. but two? then three? all at once??????
really, screw this trash game and its devs

If it is into mid to late game you should be able to crank out a large fleet as well as changing some policies for defensive wars or for better retreating to save you fleet to fight another day. You can use that to force status quo/white piece with one Federation and then Focus your efforts on defeating the other one
This will likely require losing a fair bit of territory on one front while focusing on the other but you should be able to recover that territory.
I had a similar thing happen when an ai federation declared war on me and then the fallen empire awoke, declared war, and took 1/3 of my territory while i pushed back the federation
You probably just got unlucky with the actions of the ai thinking you were weak enough to take on but without knowing the war goals set by the ai we don't know if they wanted territory, subjugation, or your death.
Also, that crisis management of when multiple bad events coincide can be some of the most exciting moments of gameplay. Handily destroying the ai is fun but without those crisis moments it just gets monotonous.
AIs haven't changed in thirty years. Paradox has done nothing but use the same AI every other AAA developer has been using. You want to blame someone, blame all devs that won't even try to do anything with AI.
