I think he closed the outliner.
A ship list should be right there on the right hand side of the screen...select a fleet and you will see the ships. Also the fleet management window might do what you are looking for.
I haven't done the tutorial in years...I would not be surprised if it hasn't been updated to cover much of the game. Though with the way they keep adding layers and micromanagement I don't think anything but a game play video could ever actually be helpful.
Fleets are the smallest unit of combat ships the game has. A laundry list of every ship you have would be meaningless since you can't give individual ships orders. It is annoying...like it would be nice to bring up a list and tell any damaged ship to go off on its own to get repaired, but first you have make a new fleet of the damaged ships and then tell that "fleet" to go repair. So yeah...I think I am reading into more of what you might looking for, but it is the way it is. People were suggesting similar things at the original launch, so I doubt it will ever get changed.
The fleet list is on the outliner to the right, the category is named "military Fleets". The outliner is customizable. See screenshot: https://steamcommunity.com/sharedfiles/filedetails/?id=2095499882
