Ironman & saves
I'm the savesman and don't like when game forces me to don't save. Is there any mod or config edit for enabling achivements AND saves in the same time?

you want rewards without working for them? everyone would have 100% achievements if saving before every decision was allowed.

If I would want "rewards" without working for them, I will just hack all achivements through SAM. I don't have a pleasure for unlocking 100% achivements as I don't have a pleasure for hacking them. I don't event want to know what should I do to unlock them. <...>
I'm a newbie and don't want to ruin my experience (is it possible?) by don't knowing some game's aspects

just play non-ironman mode then until you feel like you've gotten the hang of things

When you want to "save" an ironman game, exit to menu and back up the saved game folder from your "My Documents\Paradox Interactive\Stellaris\save games" folder to another location. Then load the game to continue. You'll need to do that each time you want to save your progress.

When you want to "reload" an ironman game from one of your previous saves, exit to menu and delete the saved game folder from your "My Documents\Paradox Interactive\Stellaris\save games" folder. (Make sure you are deleting the correct one.) Then copy the "saved" copy of that folder back which you want to load back into that location. When you load the game you'll be back at the point where you made that "saved" copy originally.

when you start a game on the Galaxy set up menu, right at the bottom there should be a thing to turn on Iron man mode. or turn it off.
Once you've started the game, you can't turn it off. Maybe there's a way to edit the saved game, but I don't know how to do that. You'd probably need to search for instructions or tools online.

Ironman mode is selected during game creation, so in future games you can turn the option off and you will be able to save and load those games normally.

No

The file name does not cause ironman mode, its ironman mode that causes the specific save file.

If I will enable mod disabling achivements, will saves works?
If no what the sense of ironman + no-achivements-friendly mods and what the sense of not giving user a possibility to turn this thing off when achivements is already turned off?

if the game is not ironman compatable you should be able to save at anytime you want. though i tend to make sure ironman is turned off when doing so anyway. just in case

No, Ironman only saves when you exit to menu or exit to desktop.

(Correction: Actually it may save periodically; I just remembered I have autosaves turned off.)

You won't be able to convince ironman to work differently than it does, even if the way that it works does not make sense to you. Start a non-ironman game if you don't want to be limited by the restrictions of ironman.

Why can't I just disable ironman with no possibility to enable it? It would have much much more logic
