If I get a patron say the eater of worlds and just leave the shroud will I get another chance to get another covenant? or is it like you either form the covenant or sit in the corner and think about who you just rejected kind of deal.

If you reject the covenant you will eventually get another offer from a different entity. I've never persoanlly seen the same one show up twice so I can't answer about getting another chance at the one turned down.

Pretty sure you can only have one covenant and can't change your choice once made.

Each time I chose a covenant, I have never been able to get a new one popping.

If you sign one covenant, that’s going to be your one for the game. Unless you mean refusing it and then not getting another.

Eater of Worlds just occasionally shrouds planets/eats pops. What you're thinking of is The End of the Cycle... that one puts a 50 year egg timer on your empire before going kablooey.

Yes, you eventually wil either until you accept one, or refuse all of them
