And I think it's good that you can, otherwise you would be lacking so much important information that you need to make good decisions about where to explore first, where to expand, etc. Starting "blind" is only a good thing if the game allows you to actively get the scouting information you need to make informed decisions, which would not be the case in Stellaris,
Just yes! I played just befor 2.0 every game with only hyperlanes and a mod that give the galaxy this real fog of war. Its just not realistic that you can see the whoule hyplerlane network when you have no intel over your neighborhood-system. :D
That you dont even know where your start system is in the galaxy because all space is black is the good thing about that... yes it makes things more difficult. But just more exciting.
In my last game i see my neighbor empires and can block them of from massive space room just with quickly build space stations in theire borders... its fun. But a bit to powerfull...
