Most people that are hesitant on the cost just pick up the DLC as they come on sale. Make sure you checkout isthereanydeal.com for the best prices.
With each free patch comes a DLC (which tells you how often it’s been updated)
Unfortunately this process means no GOTY edition as the game never stops moving forward
So for example add everything to cart and get an extra X off the price for buying it all in 1 transaction or add Stellaris plus ALL expansions to cart and get an extra X off the price.

I can't play a game without all the dlc included. Feels like I'm missing out. Even games I've been playing and enjoying. If a new dlc comes out, I stop playing if the price is too steep since I'm missing out, loosing all interest.
So complete editions are a thing for me.
I can understand a game still bringing out new content of course, but when the dlc cost almost the same as the main game, it better be a gosh darn good one. If you roll out dlc after dlc and they are all priced very high, you loose me.
Still waiting for Curse the the vampire coast dlc to drop on total war warhammer 2 to keep playing. I tried going back, have all the other dlcs even the newest one, but just doesn't feel the same.
I dont fault you at all. I used to feel the same way with the exception of Stellaris.
That said, this might not be the right time to jump in as Stellaris will see more DLC/developement for the next 3-4 years at least.
You think will be this much of time? Let´s hope they bring new good content for us at least. I really hope they had some type of zombie plague and quarentine system for the game in the future. Seen something like zombies in space would be cool. Imagine not only humans, but also zombiefied aliens, really good possibilities, there some way to contact the devs? I would like to suggest that for them, a galatic epidemic to quarentine/contain/cure/study/control would be very cool. Maybe a event, where you discover some type of virus/pathogenic and try to research it for immortality, would be a cool back story maybe.

they also have a great multiplayer policy with their dlc. multiplayer games use whatever non-cosmetic dlc that the host has active, so if you play with a few friends only one of you needs to own the dlc to allow all of you to use it in that game.
That's not entirely true though - Paradox have made "complete" editions on occasion, with future DLC not included.
