Surrender means they get exactly what they want, which in the case of a Conquest casus belli means that they would get territory.
You can also get their territories that you've claimed and occupied.
It's an "as is", not an "as was".
1: Fully occupied
and
2: Claimed
Surrendering means that even if the enemy hasn't actually occupied your systems, they'll still get them (along with whatever the war goal was, like Humiliation). The tooltip tells you what systems will change hands if you go with a Status Quo.
Claim: Stuff you want to take for yourself regardless of your wargoal.
Status Quo: Neither side are capable to achieve total victory. Mostly, because of the WE system. When it happens, then everyone gets what they occupy, and claimed, and depending on wargoal something extra happens with the rest of the occupied territory. Upon 100WE a 2 year timer starts. Once timer run out status quo goes into auto accept.
Vassalization, Impose idology. If you occupy at least one planet, that you aren't also claimed, then new empire created. In case of impose idology the new empire will get a 10 claim freely on the old one.
Anything else: Nothing. They get back to their owner.
Surrender means, that the winner gets what they asked for, and the loser gets nothing. Surrender goes into auto accept, if target empire(s) has no systems at all. If it's a multi empire war, then allies are considered as one.
Total War is a special case. It means, that all territory instantly switched when conquered, and upon surrender all of the target empires' territory will be taken by the winner. Without mods AI will never surrender in total war, but losing all their planets means the erasement of their empire. Upon status quo in total war the war simply ends.
You could say, that total war works like in most strategy games. The moment you conquer something it's yours.
