Restoring Ecumenopolis
I have the world from the rubricator event and Its currently pumping out research from the central spire so my question is if restore the ecumenoplis will I still have the central spire with the research or will it be lost in the restoration

You will not. You lose the planet-specific features of the planet.

PS - not to ruin things, but I'd recommend if you haven't already completed the archeology event - don't. Stop it right before the last step. You can thank me later :p
Finishing the chain isn't a bad thing, in that you can get some benefit from it. You definitely want to colonize any planets in the system first, though.

For me it's a no brainer to never ever restore an Ecu. A relic word is way better for it's reseach and espacially the special resources.

Just make your own Ecu's.

I'd say it depends, If you need to boost up resources, Then I'd say go for it.

Restored ecu is pretty much always better. Sorry to say Stinker but ... you're just wrong :)
You lose the spire modifier and the other that combine to make +30% research. However when you make it an ecu. You get a new modifier called "Former relic world" which gives a +10% research.

And more importantly, you get access to the Ecumenopolis buildings, which are just downright fantastic. You get waaaaay more efficiency from them.

One ecumenopolis can effectively replace your entire empire's consumer goods and alloy production, allowing every single other planet to just be exclusively research. Eventually, you can build a second one to pick up the slack if you're falling short, but that won't happen for quite a while.

The bigger problem, atleast in the early to mid game.
Is to get enough pops to fill it... XD
