If you do get Stellaris go ahead and try everything out but be prepared to stick to smaller galaxy sizes and normal speed.
Now, OP: you should be able to run it okay. End-game lag will probably be hell whatever you do anyway, but one thing is for sure: you won't be able to zoom in on large late-game fleet battles. You'll have to either leave the system and see what's happening with the battle info panel, or keep things zoomed out as much as possible. I'd also try and limit my use of missiles, if I were you. Mass drivers (kinetic weapons) are the best because they're pretty much invisible, so your processor won't melt trying to display them all. And as others have noted, setting the game to Very Fast might also be impossible after a while. Other than that, you should be fine.
