Actually have to double check if you can observe in multiplayer.
Other good way to learn stellaris -> Play singleplayer.
Just takes some ship order queue management, mostly af first, then it's pretty chill.
Edit:
All specifics like what exactly you need to build, what tech to research etc. come from enough single-player expirience. It's possible to explain it 'on paper', but hardly worth the effort.
You don't have to be good at it to play multiplayer, obviously... just don't expect to win =)
also like i said jump into observe and watch the AI for a while it may help.
If using let's plays, make sure they are multiplayer, otherwise you might learn things that work mostly vs. AI but not in multiplayer
