Any good spectator mods?

As the question says. I want to try making a game with the empires I created, set them in the galaxy, then just hit play and watch what happens. Are there any good mods out there that can provide it? I've heard such things existed for EU4 and such.

Just open the console and type in observe.

Haven't there been a lot of stability issues with the console observer mode? Or do I confuse that with some other game? And how do you open the console anyway?
