Having trouble getting platinum in all matches
It seems that for everything I do right, I still only manage to gold rank a single battle, and plat the rest.
can someone give me a better idea of how the rating system works?

The scoring system in this game does seem to be different to other Platinum games. I believe in games such as Bayonetta and The Wonderful 101 you have to complete a battle without being hit, get a high combo and also complete the battle quickly.

This game only seems to weigh the platinum medal based on your combo and time while ignoring the damage done to you. I managed to get a few platinum medals on expert difficulty with a high combo score, a low time but I also got hit a fair few times inbetween.

I started playing the second level again on normal with my bending maxed out and with some useful talismans, but I was still only getting gold and platinum medals. I then restarted the same level but this time I took all of my talismans off; I managed to get gold and silver medals throughout.

This is only stuff I have managed to find out myself. I'm hoping someone else can offer some more suggestions.

Yeah, only time really matters now. Combo just goes with it.

Pro tip - max out bendings, equip shadow fist and full charge. Then airbend/firebend enemies away.

Okay, I 'm starting to easily platinum the levels on Normal now.

Combos and time seem to be weighted fairly evenly; you need to complete each fight fairly quickly and with a high combo.

The way I am going about getting them is by having max level bendings and equipping the Full Charge Talisman (it costs 300,000). While I was playing through on normal I was too powerful so I dialed it down with the only two talismans that reduce your attack power (I believe one increases your HP and the other increases the amount of soul energy you get).

I juggled all of the enemies using air bending and I also purposly got hit a few times to see if I was still awarded platinum medals.

The problem I am having, is can't tell the difference between the silver and platinum... Can somebody point me in the direction of a chart showing all of the medals?

Platinum is shinier and has a sparkle in the top right corner. Silver is kinda dull looking. Yeah I found that I get platinums easy when I use fire/air bending with the speed and damage talismans

Yeah, I tend to use fire and air now that I'm maxed out. I have the always charged, regenerative health, and speedy strikes talismans.
