Netherlands can declare war for independence as a vassal at any given moment especially when their opinion is in the negatives. Additionally alliances expire after certain turns. If you act aggressive with expansion coalitions can form up. If you have an alliance then attacking one of the allies might also trigger the alliance against you even if you are in the alliance.
Peace & fighting alliances
The allied countries are there to defend the nation being attacked. Although capturing their territories also lets you get more war score to capture intended target country. It's a good feature to allow you to rebuild your armies while the select countries are in Truce mode or else they might consider invading you immediately preventing prep time. It makes it better if they are the ones who invade you so you can capture the entire country but one has to be prepared, which would give you a lot of war score in total.
Full Annexation
You can annex countries by clicking the suggested button when choosing provinces you capture. If you have the right amount of war score it would instantly help in full capture.
Troop organization
Troops can be easy to upgrade and remove/edit. So that's not really an issue. When you deploy the troops you get initially have the option to position them as first line and second lines. You can merge units or split them too and add more troops if that's not enough.
AoH3 is a different beast from AoH2 but the features can be adapted to as further one plays through the game. Everyone has their play style and speed though it might take a while to get used to the mechanics of AoH3. Even now I find some hidden functions in the game.
