If you try to fight them at the minimum dungeon level (6), you'll have a very very tough time, since the boss is rated for level 12.

It's technically possible to kill them at level 6 but not recommended. You also don't need to kill the boss to finish the "Clear dungeon" quest.

Come back at level 10 and it's much easier. Especially if you're using Katars.

Boss health regenerates while you're dead. If you're slow to get back in the fight, it will restore to full health.

I just started a new bow bandit run, and since I'm a bad player, I decided to do some grinding first... Half an hour later, the problem was that because I kept myself interested doing other things, I ended up leveling all the way to level 12. When I tried the dungeon again, the whole thing became way too easy. Still, this isn't a game with super linear progression where you beat one thing and jump to the next immediately. You will need to grind a little bit in between.

I beat the boss with a Strength-only build 4 levels below him and using nothing but Rock Toss. Parrying is nice and all but you need to learn to utilize the dodge for more than just traversal, it's often times easier than just parrying.

In other words, keep trying until you learn the boss' patterns. Buy a crapton of healing items if you prefer tanking. There's no penalty for dying to bosses besides time wasted.

Also, try tackling the Slime Diva first if the Catacombs' first boss is too difficult, as she's much easier to reach, is at a lower level, and her fight is easily repeatable.
