Also, this is a one-dev project; there are no "devs"
If you want to mod the model with tools like blender, I can't help you there.
The good news is, I'm interested in creating lvls, so I had to do some research anyway.
Also I'm currently sick and can't do all the planned party stuff.
For character models, it seems you can't create or modify them in unity itself (though I only researched this for 1 minute). This means you will need Blender.
"Import" the Game into unity or a tool, extract the models and save them in a format, that can be opened or imported in Blender.
The bad news is, the last sentence is not as easy as it sounds, because you may need to install lots of tools (= lots of google search).
Instead you should start with the Bender basics. Watch some beginner tutorials and create some basic stuff. You will need a lot of time and patience. When I looked for a way to open game models in cad software like solid works, I found a lot of people giving up very early, because information isn't presented on a silver plate.
[edit] for extraction tutorials, search something like "extracting 3d models from unity games" or "Ripping from Unity engine games"
