If I'm a mage, is there any point in putting points into DEX?
It increases magic crit, yes, but does that really make a difference? Should I just focus on Mind and Vitality?

You get more crit from Magical enchants than you would from any amount of points in Dex.
Dex crit increase is too small to really put points in for it. (someone did testing and it's like 2% with an almost rounding error decimal amount)
The crit from it feels like it's more to make Bandits the crit class by giving them slightly more crit than anyone else.

most people splitting MainStat/Vitality have said that a 2/1 ratio seems to give the best damage/survival amount. Wish you luck!

just makes trying to make a tank build a pain in the rear, as magic/physical damage is split between mind/str respectively, but i guess that's what guardian enchants and bulwark are for

good ol' Ragnarok Online stat distribution~ I immediately did the same thing when I saw 3 points to spend per level and only main stat/HP stat lol

RO has been what I've been comparing the class design to myself personally. I feel like not a lotta people playing have knowledge about that game. On that note: Kiseff could add "cast speed increase" to dex as well as crit to give it more universal appeal. I remember back in the day stealing wizard spells on my Stalker(a rogue class for those who don't know) and being able to instant cast massive AoE spells because I was full dex, which was fun.

Yeah I like that idea for cast speed. Maybe even an Agility stat that gives evasion, movement speed and attack speed, I would gladly take up a 3rd stat if it were something like that even if the growth were similar to crit rate.

For Mystic I get the best feel by putting as little as I can into Vitality while being able to avoid wasting potions. Early on that felt like 0 vit because I could just dodge everything in the first dungeon, then just a few points of vit to get to 60ish HP so I got good value out of a 50 hp potion. Once you're properly a Mystic more Mind = better healing, but it doesn't scale the shield and you can't heal if you're dead, so at least get enough vitality to hold what you can heal plus one hit. At the very end when you're farming the last boss in the beta for drops, even going as high as 200 hp can be good value because there are so many situations where you hit hit pretty hard and knocked back into another hit that you want enough of a buffer that you can get clobbered and recouperate.
