How to allocate stats for each class?
For example, do I put the most points into dex when playing a bandit?
Does mystic need any points in strenght or is mind and vitality all they need?

Yeah you will probably want to invest mostly in whatever your class skills scale with which is just Fighter/str, Bandit/dex, Mystic/mind. You can change the scaling of your weapons with an NPC I believe, so there's some flexibility there.

I think there's potential for making weird builds with the aforementioned weapon scaling changing, the dropped spell scrolls and only grabbing class skills that are still effective without any help from attribute scaling, like for utility or maybe buffs. I wouldn't start my first character this way though you might have a really rough time without some game knowledge and it would help having some money and equipment/scrolls already prepared.

Most points should be put into the stat that your class utilizes. So for Fighter/Bandit/Mystic you should put most points into Strength/Dexterity/Mind and then some into Vitality.

As the others have said, Your class stat is first priority. Vitality is second, and then once you have a comfortable amount in both of those you can fiddle with the secondary benefits of the stats that aren't for your class(need a little more mana? mind, need stamina? strength. want crit? dex) but that's the LAST priority. example: my level 23 bandit has 40 dex, but I have like 7 points in mind so I don't run out of MP midfight.

Remember you can also get stats you need from Enchanting, most enchants give some manner of Defense and Magic Defense combo and that is the only way to get more of it out of armor as stats don't raise it, if you aren't putting points into your non-primary stats, you can enchant to catch up with them.

Don't skimp out on balancing both defense types while going solo even if you are a fighter/good at parrying, enemies WILL melt you outta nowhere.

the Killer suffix is very good for Bandits and Fighters, especially the later since Fighters don't normally get much Crit if at all. a Full Killer set could give you 30~% Crit which for a fighter is insane on top of the ATK power boost.
