But since it's a team game... There are other players in your team who should try to counter it. One example? Peni Parker and her alt-fire web stun can be shot at him before the ult projectile is fired (he is not cc-immune during the firing animation)... or she can also hit the already flying projectile itself with the same web stun thing and it will evaporate. Both of which require you having Peni on your team in the first place, as well as good reaction time to either stun OR intercept the projectile.
But yes, he's not cc-immune during the animation, so pretty much any other stun in theory should prevent him from firing. However, this - again - requires good reaction time of your teammates who play characters with other cc abilities. While good Iron Man usually fires that thing either from unexpected angles or literally almost point-blank, not giving any time to react in the first place.
So to put it bluntly... Iron man is Luna's counter, by design. You're not supposed to counter it, as he is your counter instead.

In summary, all i can do when i'm activating my ultimate and Iron Man also use the ultimate is basically find a cover as soon as possible and hope that the projectile didn't hit me. Well, not a single tank teammate that i encounter have this mindset, i always need to brief them what's going on and they finally know their mistake haha
Getting a real "tank teammate", unless you specifically queue with one, is going to be a rare experience. True tank players in this game are much rarer than either DPS or Support players. So, usually the tank on your team is going to be a DPS player that's thinking, "Well, we need to a tank, so I guess I'll play tank." And if they understand the game well they might even do generally competently at it, but they probably won't have the true deep-seated tank mentality or the second-to-second decision-making process down.
I play a lot of Magneto, and I can't easily count how many Iron Man ults I've caught on my shield. There were a lot of failures at first, a lot of learning, but eventually it becomes an automatic reflex. The moment I hear, "MAXIMUM..." I already know what's about to happen and that it's my job to try to minimize it. Usually I'll back up my team, see where Iron Man is and where his projectile's firing, try to interpose myself as close to in front of it as possible (maybe jumping) and catch it on the shield. If my supports are playing really far back and I have bubble ready I will TRY to bubble one of them. If we're all in a Luna dance party I bubble Luna the instant Iron Man starts yelling if I can because I know what's about to happen and I don't want to take any chances. But these are all automatic, unthinking reactions at this point. Your Winter-Soldier-Filling-Magneto may conceptually understand that Magneto can do this, but probably won't have the split-second decision making internalized to make it actually happen in the heat of the moment when he only has a second or two to react.
Magneto is particularly good at protecting his team from instakill ults, but most tanks have SOME means to counter Iron Man's ult. Strange can also catch it with his shield (and he can fly into Iron Man's face to make sure he does), but it costs him more to do so. Groot can raise a wall in front of the supports to give them cover (but this isn't 100% if the ult hits behind the wall and vaporizes them anyway). Cap can shield it and reflect it, which is hilarious. Hulk can pop his shield. Peni can web the Iron Man. If Thing friend-jumps onto Luna I believe that should allow her to survive. Venom and Thor I don't think really have anything they can do about it.
