Confused about what happens when you hit INF, and how to get INF/s?

First Infinity will give you 1 Infinity and 1 Infinity point and yes they are different. New Infinity tab unlocks on the right side. In the Infinity tab there are several tabs at the top. Infinity points (IP) are used to buy upgrades and generators. Keep doing infinities and buying upgrades.

You are not close to Eternity challenges yet :)
You buy upgrades, generators and so on, farm infinities and infinity points (which are different things) and eventually (when you hit 1e308 infinities, not a coincidence) you can unlock Eternities.
so im guessing there is a way to get more infinity points per infinity?
Yes, you should see a "progress to x10 IP" bar once you get to infinity again. This multiplies your IP gain so the longer you stay in an infinity, the more IPs per second you'll gain.

At that stage, the game's a balance between farming IPs, farming infinities (by making them automatically reset as soon as possible,) and buying upgrades and generators to be able to farm IPs and infinities better.

You will not see "progress to x10 IP" when you infinity a second time. You will be infinting out for one point until you get the achievement for 5 infinities. It is a little bit slow to start, but that's the point of idle games is that you'll be getting faster infinites because of the upgrades you get, and eventually you'll be infiniting in seconds.

The above quote stems from eventually unlocking infinity challenges, which are harder runs that give a benefit once you complete them, and also multiply your IP gain as well. For now, the pathway is to just... loop through to infinity a few times?

If this reset turns you off of the game, but you still want to keep going, do be warned that there's something not dissimilar later, but you progress at least 4 times faster than before.
