I'm not sure if you mean "Settings" in Roll20, because I don't see "Options" anywhere. If so, you can't set which camera Roll20 uses from there in any option that I can see. At the top of the page in the address bar, however, there's a little camera icon. When I click it, I have the option to select which mic Roll20 is using, but I can't interact with the video input dropdown box (it's greyed out and set to Facerig VirtualCam).

The fact that Roll20 doesn't have any option to change the webcam, again, is something outside our control.
Sometimes that causes the webcam to be set as "default" in other programs, causing it to possible work again.
Also, you can always just enable the "real webcam" in facerig by clicking the pic'n'pic button a couple of times
