Hi,
In the Document settings, you can unlock the document size. Its the small lock icon between the width and height amount. This will allow you to enter non-square sizes. The icon is a bit hidden, so I'm sorry this is not apparent. Its easy to miss :)

Basically if image isn't square it does not display with correct aspect on stencil.

Oh, I'm sorry. I misunderstood. This is an issue at this time. You can't use non-square image in stencil. We have this on the list to address. I don't have an ETA, but it will allow for non-square in the future.
As a workaround, you could take your image in photoshop and place it in a square pixel size. Resize your image so that it fits within the square ratio. This will result in black bars at the top and bottom. Its not ideal, but you can still work with the texture.
