Changing material properties in CK
I think I'm a little mixed up and chasing old tutorials. I can't seem to find anything specifically addressing my problem, so I figured it can't hurt to try here.

So to make materials editable in CK, you have to add
[Materials]
bUseCompiledDB=0
to CreationKitCustom.ini

CreationKitCustom.ini doesn't exist by default, I had to make it. I did that and I added the lines above. Naterials are now editable but I can't see them. I don't know how to make materials both visible and editable.

What I end up with in CK when trying to edit a material is this:

Is there some other way to edit materials? I'm simply trying to make something shiny into something matte.

You will need to unpack Data/Textures at the minimum I think. I have the whole game unpacked so I'm not 100% sure.

I've gotten that far and opening something like ShipDarkGreyMetal01.mat results in the problem shown in the screencap.

I am able to make a totally new material, however. Maybe that's what I need to do and then learn how to apply it to the model.
