It's all about pattern recognition.
I am not going to lie. I felt like I would never beat him during my initial playthroughs either, but it's now almost always a perfect no-hit fight for me.
There are moments where you can deliver him the damage and moments where you'll have to be patient and wait for the next opening.
Medallions, elemental ones in particular, help a lot too.
Just keep calm and try to learn his patterns. If not, you'll find it a lot more difficult to deal with the second boss. And even he isn't all that difficult when you follow the same line of thought.
Learn the patterns and be patient. Just don't expect to hack him to bits in one single onslaught.
