What exactly does the difficulty change? just how many people attempt to steal or is there other stuff too? Do I get more money per day on diff. 7?

From what I have noticed, increased difficulty affects amount of total customers, how much stuff each customer will carry, customer movement speed, and potential for customer to be a shoplifter. If you can smoothly take care of the customers needs, you will make more money and earn franchise points faster. Failure to do so means more missed sales, more people shoplifting because of backed up registers, and since people move faster, they can escape faster as well with even more loot.
