Bragging about my store but also venting a frustration

I have finally completed my store build out as of day 44. I have unlocked all spaces and have one entire shelf/fridge/freezer per product. Each shelf is 100% full of product. At my current inflation rate I have $296,324.57 worth of product on the shelves that will sell for $592,649.12. This of course will go up on Thursday. I have uploaded my screenshots publicly. (For those interested) I have kept an excel of all expenses, Total Store Cost: including lights, shelves, storage racks, freezers, lights, signs, plants, tv's, cashiers, and now metal detectors is $86,095.) The only data I don't have is how much $ was spent on expansions, which I would love to know.

Here is my frustration. To my dismay, when logging in today, I realized that the Cheese bags have changed from Shelves to Fridges. This is a MASSIVE problem for me as they are directly in the middle of the order of items. Each shelf for me is in order, meaning 50% of the shelves now need to be relocated 3 spaces to the left, and I have to re-organize my Fridges section. Is this a minor complaint that only pertains to organization psychopaths like me? Sure. But it was still a surprise I was not expecting while finishing my store. Anyway, take a look at my screenshots for pure Supermarket perfection!

Oh also, I am making just shy of $50k/day difficulty 7 day 44. I have over 60 hours in the game now lol and am on my first save day 44. The perfectionism is real.

Suggestions:
It would be really nice to find a way to make the stockers stock the shelves to 100% capacity. It would also be amazing to setup some sort of auto-ordering system. Also I could really use more than 5 employees at this point. Carrying multiple boxes (handcart/dolly) would be huge as well.

YES! It took me WAY too long to figure this out. you have to have a number pad, but its why my products are all in order, I can change all of the prices very quickly when comparing to my excel sheet.

I have a second keyboard hooked up with a number pad and can crank out the changes. enter the new price including the decimal and press enter.
