Any ideia how much we can raise the price of an item? sometimes we can only raise by a penny, other we can raise like 15.

Im pretty sure the max is double market price. I always do one penny less than double.

According to the developer, the maximum price is about 2x. So I usually charge 10 cents less than double price to make sure no one complains - it works great!

Once you have employees working at the register, i would recommend doing 2x the price minus one cent. Because that gets you the most miney without the customers complaining, and the checkout employees don't care about the prices anyways.
If you don't have employees yet, or do the register by yourself, you should do 2x the price and then down to the closest number with x.x5 or x.x0 digits below, as you don't need to use 1 cent coins.
Or, alternatively, you can go for .25, .50, .75 and .00, which makes the checkout job even easier. Just remember to not cross the 2x market price, as people will stop buying this product.

Note: Customers will not completely stop buying it, but a part of them will complain and decide to not buy. This makes you more losses than you gain from upping the prices above 2x market cost
